BUTTERCREAM ICING

YOU WILL NEED:

 

1 cup Salted Butter

3 tsp Vanilla

4 cups Icing Sugar

4-5 tbsp Coffee Cream (18 % or higher)

 

I love making cupcakes! I don't know whether my favourite part is decorating or eating them?! but regardless the key to delicious and beautiful cupcakes is a really good icing recipe. 

 

I have been using this recipe for the past couple of years and I have never looked back! I get so many compliments on my cupcakes now, specifically that the icing is DELICIOUS! So if you're looking for a really tasty but simple icing recipe be sure to give this one a try.

 

To make this icing begin with butter that is at room temperature. Whip the butter using an automatic handheld beater. Then add the icing sugar 1  cup at a time, whipping after you add each cup. Add vanilla, whip again. And finally add the coffee cream. I find that the higher the percentage of the cream the better the icing ends up tasting however 18 % works just fine. For this batch of icing I used 32 % cream. When deciding how much cream to add keep this in mind: Less cream = stiffer icing and More cream = fluffier icing. I tend to put less cream in because I like it when the icing is thicker as it looks nicer once iced out a piping bag; it holds its edges/shape better. 

 

This recipe can frost up to 20 cupcakes, depending on how heavy-handed you are with icing so if you're making a lot of cupcakes be sure to double the recipe.
